Simple baked squash recipe. This squash recipe is a great tasting healthy side dish that can be prepped within minutes. Baked Butternut Squash recipe takes about 45 minutes to cook. Serves 3-4.

  • 1/4 c olive oil
  • 1 butternut squash, cubed
  1. Preheat the oven to 400 degrees.
  2. In a large casserole, place the squash cubes in a single layer.
  3. Lightly layer the squash with olive oil.
  4. Bake the squash until they are tender and nicely browned on the edges, 45-60 minutes.
