Banana Bran Muffins Recipe
Early morning treat! Favorite thing to wake up to or even have has a bed time snack is a banana muffins. The moist texture and flavor of a banana muffin is so great. I often like to split the banana muffin in half and microwave it for about 10 seconds to make it warm again. Enjoy this easy banana muffin recipe. Makes 12 banana muffins
- 2/3 c Light Brown Sugar
- 1 tsp Vanilla Extract
- 1 c Banana – ripe, mashed
- 2 Large Eggs
- 1 c Wheat Bran – unprocessed
- 1 c Buttermilk
- 1/4 c Canola Oil
- 1/2 tsp Ground Cinnamon
- 3/4 c All-purpose Flour
- 1 c Whole Wheat Flour
- 1/2 tsp Baking Soda
- 1 1/2 tsp Baking Powder
- dash Salt
- 1/2 c Chocolate Chips – optional
- Start by preheating your oven to 400 degrees. While that is going coat your muffin molds with non-stick spray.
- In a mixing bowl, whisk your brown sugar and eggs together, blend in your mashed bananas, buttermilk, vanilla, oil and finally your wheat bran.
- In another mixing bowl, mix all of your dry ingredients together, both flours, baking soda, baking powder, salt and cinnamon.
- Now you can mix both bowls together, slowly adding the dry ingredients as you blend. After this is done you can add chocolate chips if you would like.
- Scoop your banana muffin batter into the muffin tray, cook for about 15-20 minutes or until the top of the banana muffin is golden brown. You also check by touching the top of the muffin and have it bounce back up.
