
Easy Chicken and Broccoli Soup
I thought spring was finally here but I was wrong. The temperatures dropped again to a high of 44 degrees! That is alright though, as long as the cold weather is around I will continue to enjoy making my chicken and broccoli soup!
This is an easy way to make Chicken and Broccoli Soup without having to prep and slow cook everything for hours.
Serves 2 or 3 people

- 2 Boneless Skinless Chicken Breasts
- 2 c Broccoli Florets (frozen or fresh)
- 3/4 lb Macaroni
- 48 oz Chicken Broth (resealable box)
- Grated Parmesan
- Salt
- Pepper
- Start off by bringing a pot of water to a boil for your macaroni. Boil until they are fully cooked or soft enough for your liking.
- You can also begin to boil your chicken breasts in the entire box of chicken broth, 48oz. Once fully cooked, about 10 to 15 minutes, you can remove the chicken and begin to shred it by scraping it with a fork. If you have a small processor you can shred it quickly in there, becareful not to shred it to much. Do not drain the broth either because we will be adding the chopped broccoli, macaroni and chicken back into that pot.
- While your chicken is boiling you can also go ahead and boil your broccoli in a separate pot. I do not like cooking the broccoli in the broth because the flavor of the broccoli can over power the broth. Once the broccoli is soft you can drain and chop them to smaller pieces before adding into the broth.
- Add everything back into the pot of broth and let simmer for another 5 minutes for the flavors to join.
- Serve the soup and top it with grated Parmesan cheese, salt and pepper
