Chicken and Mashed Potato Bowls Recipe

I know this is a knock off of the KFC Chicken and Mash Potato Bowls which were big two years ago but my father makes a really good homemade version of it.  This easy recipe is one that I had to write down for everyone.  Anyone with kids, this is a great meal for them, it is healthy, fun to make and what kid doesn’t enjoy little popcorn chicken nuggets with cheese.  This easy chicken recipe is probably good enough for two people

source: my father

  • Potatoes (4 or 5 large ones)
  • Corn (canned)
  • Tyson Popcorn Chicken (any brand will do though)
  • Shredded Cheese (Mozzarella, Cheddar or American)
  • Heinz Chicken Gravy (jar)
  • Milk
  • Butter
  • Salt
  • Pepper
  1. Start off by reading the directions for the Tyson Popcorn Chicken.  Preheat the oven and place half the bag on a baking sheet.  The chicken will take anywhere from 15 to 20 minutes to cook so it is good to take care of this first.
  2. Next, start off by peeling your potatoes and slicing them up into small cubes in order to get them ready to boil.  Feel free to use instant potatoes for this meal. I prefer fresh mashed potatoes since they usually have more flavor.
  3. Throw your cut up potatoes into a boiling pot of MILK! Yes that is right, we are going to boil our potatoes in milk instead of water.  I found this to be a little trick that makes our mash potatoes creamier and adds a little more flavor.  After your potatoes have become soft you can drain the milk into a side bowl. Do not throw this milk out, you can reuse this milk while you are mashing your cooked potatoes!  Also be sure to add a little butter into your pot after draining the potatoes.
  4. While your potatoes are boiling you can start heating up your canned corn.  Nothing really needs to be done here, if you wanted you could melt a little butter with the corn if needed.Serving Chicken and Mashed Potato

  6. As  you can see all the hard work came from the potatoes.  Once everything has been cooked or heated, place everything on the table and allow everyone to build their own Chicken and Mashed Potato Bowls.  Sprinkle some cheese and gravy on top and Wah La!  Easy delicious meal!
