Chocolate Mousse Recipe

- 4 1/2 oz Chocolate Chips – bittersweet
- 1 c Heavy Cream
- 2 tbsp Espresso
- 3 Eggs – separated
- 1 tbsp Sugar
- 2 tbsp Butter – chopped
- Whip your heavy cream, then refrigerate.
- In a medium sauce pan, mix together the chocolate, espresso and butter over medium heat, stir frequently so it does not start to simmer. Once it is smooth remove from heat. In the meantime…
- Mix the egg whites in a mixing bowl, Once thoroughly mixed, slowly add the sugar and beat until it thickens.
- Once the chocolate has cooled off a little, still is warm but is not hot, stir in the yolks of the eggs. Next, take 1/3 of your whipped cream and mix that into the chocolate. Mix in half of your egg whites. Once everything is mixed together well you can add the remaining egg whites and then the whipped cream.
- You have just made chocolate mousse, serve the chocolate mousse into their individual serving bowls, cups or fancy glasses. Refrigerate for a minimum of 9 hours, you can refrigerate them up to 24 hours.

Good idea to put in espresso for those who like coffee.
