Italian Wedding Soup Recipe
Italian Wedding Soup is a great soup that has run in my family for a long time. During the fall or winter months my mother used to cook a big pot of Italian wedding soup to have for lunch or even dinner. Used to love grilled cheese and Italian wedding soup for lunch when I cam in from playing in the snow. I hope you enjoy this Italian wedding soup recipe.
- 2 Escarole – medium sized, chopped
- 1 lb Ground Beef
- 8 c Chicken Broth
- 4 Large Eggs
- 1 tsp Parsley
- 2 tbsp Basil
- 1 1/2 c Parmesan Cheese – grated
- 1 c Bread Crumbs
- First we need to cook the escarole in a pot of boiling water until the escarole is soft, this helps remove some of the bitterness. Once the escarole is soft you can strain the water and also squeeze out any excess water that the escarole had absorbed.
- In a mixing bowl, add the ground beef, one egg, parsley, basil, 1/2 cup of Parmesan cheese and Italian bread crumbs. Once mixed, make tiny little bite-size balls of meat.
- In a large pot, bring the chicken broth to a boil, drop in the bite-size meatballs. When they start to float, it means they are cooked.
- Throw the escarole into the broth.
- Finally, in mixing bowl, mix your last 3 eggs and remaining cup of cheese. Once mixed, pour it into the soup, and stir until the egg is cooked!!
