Easy Egg Taco

Scrambled Egg Taco?  Anyone every try this before?  This morning I woke up and had nothing in my refrigerator besides 3 leftover taco shells, eggs and about a mouth full of milk.  Now that I think about it, why did I store my three left over taco shells from last night in the refrigerator?  ha.  Anyway, Rather then actually getting myself ready and head to the store, I decided to experiment and make Scrambled Egg Tacos with cheese and mild taco sauce (which is also left over from taco night)!  Serves: Three shells.

  • Taco Shells
  • Taco Sauce (mild)
  • 5 Large Eggs (1 whole, 4 egg whites)
  • 1/2 c Milk
  • Cheese – Any kind you want
  1. First start off by combining 1 whole egg, 4 egg whites, milk and a little salt and pepper.  Scramble  everything together.
  2. Pour everything into a large pan, if you pan is not non-stick, I recommend using some kind of non-stick spray before pouring your egg mixture.  For light fluffy eggs cook on medium low and turn the eggs often to prevent burning.
  3. While your eggs are cooking, you can toast your taco shells in a toaster oven or stove.  Follow the directions on your taco shell box.
  4. Once your egg is fully cooked, turn of your heat off and sprinkle some cheese on top.  Cheese will slowly melt.  Pack your taco shells with your scrambled eggs and drizzle taco sauce on top.
  5. Let me know if anyone tries this, and also if anyone has seen this before?

    Hi, yes, I’ve seen this type of recipe many times. In fact, Ortega even makes kits for breakfast tacos where all you do is add the eggs. Very popular breakfast food.
