
Tomato and Pumpkin Soup Recipe
Simple tomato and pumpkin soup recipe. This pumpkin soup recipe is different from the traditional tomato and pumpkin soup because it does not call for heavy cream. This pumpkin and tomato soup still comes our nice and creamy and is a great soup for fall or winter weather. Tomato and pumpkin soup recipe takes 15 minutes to prep and 30 minutes to cook. Serves 4-6 people.
- 2 1/4 lb pumpkin
- 1 onion, diced and peeled
- 1/2 c tomato paste
- 6 1/4 c chicken stock
- black pepper
- 2 tsp basil
- 2 tsp ginger, grated or finely chopped
- 2 tsp garlic, crushed
- First, peel your pumpkin and chop into cubes.
- In a big pot add your pumpkin and all ingredients besides the black pepper.
- Bring the tomato pumpkin soup to a boil before lowering heat and little simmer. Cook for about 30 minutes or until pumpkin is soft and tender.
- Once pumpkin is soft, puree the soup in a blender or food processor.
- Server while hot and add a dash of black pepper on top.
